For a special treat on a steamy day, try this pina colada slush. I first had it when I was pregnant. It really hit the spot that summer—and ever since! I’m asked to bring it to family gatherings all year long, so I always keep a batch or two in my freezer…just to be prepared. —Alisa Allred, Vernal, Utah'

Ingredients

  • 3 cans (6 ounces each) unsweetened pineapple juice
  • 2 cups water
  • 1 can (10 ounces) frozen nonalcoholic pina colada mix
  • 1 tablespoon lime juice
  • 3-1/2 teaspoons Crystal Light lemonade drink mix
  • 6 cups lemon-lime soda, chilled

Directions

  1. In a large bowl, combine pineapple juice, water, pina colada mix, lime juice and lemonade mix; stir until drink mix is dissolved. Transfer to a 2-qt. freezer container. Freeze 6 hours or overnight.
  2. Remove from freezer 45 minutes before serving. For each serving, combine 1/2 cup slush mixture with 1/2 cup lemon-lime soda.

What variations can I make on this pina colada slush?

When you add the soda, stir in some mango nectar, decreasing the amount of soda by the same amount. For alcohol-based variations, add a little rum or amaretto.

What kind of rum goes in a pina colada?

Pina coladas can be made with any kind of light or dark rum, with dark rum adding a terrific depth of flavor. But hold off on using spiced rum.

Can I make a pina colada slush ahead of time?
