Ingredients

  • 6 medium cucumbers, thinly sliced
  • 1 medium onion, sliced
  • 1 cup white vinegar
  • 1/4 to 1/3 cup sugar
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried marjoram
  • 1/2 teaspoon lemon-pepper seasoning
  • 1/2 teaspoon ground mustard

Directions

  1. In a large bowl, combine the cucumbers and onion. In a jar with a tight-fitting lid, combine the remaining ingredients; cover and shake well. Pour over cucumber mixture; toss to coat. Cover and refrigerate at least 4 hours. Serve with a slotted spoon.

Can you use peeled cucumbers?

Some cucumber peels taste bitter, so feel free to peel the cucumbers before making marinated cucumbers. If you want to leave on some peel for color, you can peel stripes down the cucumber, removing the majority of the bitter peel. They'll remain structurally intact and look great in this or other cucumber salads.

What else can you add to marinated cucumbers?

This marinated cucumber dish is really simple, so you don’t need to add many extra ingredients. Feel free to play around with the herbs and spices or use different types of onion based on your preferences. For instance, sweet onions have a mild flavor and a touch of sweetness, and red onions bring a peppery flavor.
